I’ve said this before—I hate spending all day aSunday meal prepping for the week. What a drag. I’d rather spend a few extra minutes making more of something or prepping something for another day when I’m already in the kitchen cooking dinner. So…I brought back the Cook Once, Eat Twice theme so we’re cooking protein from scratch for a few main dishes and using leftover cooked proteins for a faster dish the next day. Plus, I added ideas for how to prep the same ingredient you’re using in one dish for another. Using one ingredient for two dishes also helps cut down on waste and costs.
