This week I have for you three summery recipes using fruit and yummy veggies for colorful, healthy, easy (and cheffy) meals. They’re “low-cook” or use your grill or broiler so you don’t have to slave over the stove too long. I also included an idea for leftovers for each of the recipes for lunch or a no-cook next meal. Shopping list included, as always!

I love relishes because they’re an easy way to incorporate more fruit in your diet for more flavor, nutrients and fiber. You can also make a bigger batch and just eat it like a salad for lunch the next day! Don’t forget to grab a rotisserie chicken for the week! Here’s my post about that. It’s a weekly staple lately.
