Chef Justin’s Cuke Salad
A crisp, refreshing salad with a punchy vinegar bite and loads of fresh dill.
Serves 4
Ingredients:
2 seedless cucumbers, thinly sliced
½ small red onion, thinly sliced
1 teaspoon sugar (or to taste)
½ teaspoon kosher salt (plus more to taste)
Freshly ground black pepper, to taste
¼ cup chopped fresh dill (or more to taste)
2 tablespoons extra-virgin olive oil (EVOO)
2 tablespoons red wine vinegar
Instructions:
1. In a large bowl, combine the sliced cucumbers and red onion.
2. In a small bowl, whisk together the sugar, salt, pepper, dill, olive oil, and red wine vinegar.
3. Pour the dressing over the cucumbers and onions and toss to combine.
4. Let the salad sit for at least 10 minutes before serving to allow the flavors to meld. Taste and adjust seasoning as needed.
